Cafe 1959 “Don Ruiz” Natural

Caldas, Colombia


Don Ruiz is a wonderful collaboration between farmer Jorge Correa of Finca San Juan in Caldas and producer Jose Giraldo of Cafe 1959 in Quindio.  This lot was harvested on Jorge Correa’s farm, nicknamed “Don Ruiz” after the massive glacier covered stratovolcano Nevado Del Ruiz that sits on the border of the Caldas and Tolima departments about 90 miles north of Bogota and near finca San Juan.  Jorge Correa delivered a blend of Geisha, Red and Yellow Bourbon, Tabi, and Typica coffees to Cafe 1959’s processing mill La Clarita in Quindio.  There Jose Giraldo goes to work, doing a 48hr full cherry natural fermentation, including a low oxygen stage, before slow drying the coffee on raised beds.  The results of this collaboration are awesome, with a coffee that is bursting with Strawberry, passionfruit, and fig flavors.  One of the tastiest naturals we have ever had the pleasure of roasting.
