This amazing coffee completely blew us away when we first cupped it in early 2021 and we knew we had to share it with you. Inmaculada translates to immaculate and that is really a perfect description of this coffee. Inmaculada also gets its name from the old convent around which the coffee farms are situated and we suspect there might have been some divine intervention to create such a spectacular coffee. This lot is a combination of Bourbon, Sudan Rume, and Geisha varieties. It’s far to say that’s a pretty wild amount of goodness. But wait, it gets better, because the team at Inmaculada are experts at high-end coffee processing, and so they take these three rare spectacular varieties and put them through a unique processing method heavily influenced by the wine industry to create a coffee with such over the top fruit and floral sweetness that you just have to try it to believe it.

Altitude - 1700 to 2000 masl
Harvest - December 2020
Approach - Inmaculada’s processing is pretty next level so I’m going to do my best to break it down for you here. After harvest the bourbon and sudan rume cherries are sealed in an anaerobic tank for 8 days. The geisha gets the same treatment, but only for 2 days. After this fermentation stage, the cherries are laid out to dry on carousel tables, ensuring a super even drying that can’t be replicated on a patio or traditional raised bed for approximately 20 days. The final step is depulping and dry milling which involves machine sorting the beans by density and then hand sorting for defects afterwards. It’s an insane amount of work, but the results are literally award winning. When roasting we’re trying to roast as light as humanly possible to showcase the amazing natural acidity and sweetness of this truly one of a kind coffee.
