Run by Juan Saldarriga, La Claudina is one of two coffee farms the Saldarriga family owns in Antioquia, Colombia. Until just a few years ago, the family farms were producing what could be called very typical Antioqian coffee. Mild, caramalley, chocolatey coffee’s that fit more into the taste profile of large companies looking for “normal” Colombian coffee. However Juan was studying in Germany and not only was exposed to “third-wave” coffee culture, but met up with the guys at Nordic Approach, the importer of this coffee and some of the most demanding coffee buyers in the game. Juan asked if they could help him bring his coffee production up to a world-class level, and then invested heavily in developing not only his processing methods, but also his processing equipment. The results are really spectacular. This coffee is possibly one of the cleanest, sweetest, natural processed coffees we have tried. It’s amazingly delicious and a testament to hard work paying off.

Approach - Natural processed coffees are often very frustrating to roast because behind their big acidity and heavy body, sometimes there is just not much more to the coffee. The roaster has to work super hard to get any nice sweetness into the coffee. Not so with this one. This coffee has the deep sweetness that you find in the best Colombian coffees with really incredible, playful, tropical fruit acidity. It’s a natural processed coffee that you can drink all day.
