El Tigre is a community lot of coffees grown by the farmers of the Santa Maria Ozolotepec community deep in the mountains and jungles of Oaxaca Mexico.  The area is deeply wooded and crazy mountainous, with peaks above 3000 masl.  Getting coffee or other crops in and out of the area is an ordeal, with farmers having to travel around 5-hours one way to reach any artisanal coffee processing facilities.  Because of this, farmers wash the coffee on their own farms in a traditional method that dates back centuries.  After harvesting, farmers de-pulp and ferment the coffee for up to 36 hours at their own micro-mills.  Following this washing, the coffees are sun-dried on raised beds or straw mats before making the arduous journey to a dry mill where the coffee is finished.  Hand sorting is commonly done by farmers before the dry milling, and the result is a super tasty and uniform bean.

Approach -  Roasting this coffee is pretty straightforward thanks to the massive amount of work by both the farmers and our importing partner Caravela.  The farmers of Ozolotepec do an amazing job hand sorting their lots after initially drying them on their own farms, and then the coffee is delivered to Caravela’s dry mill where even more quality control with all the bells and whistles of modern technology is applied to end up creating a green coffee that is so wildly uniform it’s hard to believe it is the combined product of tens of different farms and farmers.  When roasting we go light to highlight the delicious dried fruit acidity and then give the coffee enough heat to bring out the sugary sweetness and round body that gives this coffee so much balance and poise.
